After expanding our building we needed to decide what to do with the extra space. More seating would have changed the dynamics of Russo's being a 97 seating capacity gourmet restaurant. Thinking about this over many lunches, trying to get a fresh, house ground, seasoned burger and put on a toasted bun, we couldn't find what we were looking for. Then we tried to find places with great pizzas that had fresh and exciting toppings, a crust that is crispy on the bottom, but slightly fluffy on top and the whole pizza was light as a feather and we couldn't find what we were looking for.

So then our thinking changed to fried chicken that is seasoned and perfectly battered and cooked in peanut oil to produce a thin, grease less crust around a succulent, juicy, seasoned chicken. It seemed to us that no business in our area was paying attention to the 3 most popular foods in America. We built out the Bacchus Lounge with 60 seats, great TV's for sports, space for live music on the weekends and a kitchen that could not only produce the food for Bacchus Lounge but would not disrupt Russo's quality.
